Hello, Interesting assignment for me. I would make this climbing wall like a steel farm it is not havy and it is strong enough. Then this steel farm you can cover some wood plate. For standing free, it is necessary to have some stiffness ribs to support this climbing wall. It will be very difficult change angle all structure, it will be easy to make this climbing wall from two parts. First always stay straight and strong enough and support second wall wich can easy change the angle. Good advice for you, better to find in google something similar grab the idea and just make Finite element analysis.
