Have undertaken a few website theme updates like this. Yes, easy enough to keep the same content but depending on the new theme pages often need to be recreated. Much depends on how many pages/posts the current site has. If the website has hundreds of pages and posts copying them would be a per hour basis. I have a staging web server that I can copy your existing website too, upgrade it, work out all the bugs (if any) and updates and then migrate it back to your production website.
