Set up Minecraft Gameserver

I used to own one of the most popular Russian minecraft servers back in a day, so I really know how to develop servers. I can use spigot or craftbukkit -- whatever you prefer. I have Amazon EC2 instance running 1.12.2 craftbukkit rpg server for tests with Java. I will prefer to unfold the server on Amazon EC2. Please tell me more about your requirements (version of the client, whether it should be licensed or pirated and other ideas). I can set up backups and allow using pocket edition. Pocket edition will only work with 1.8 version
