SCOPE OF THE WORK:
Your project can be done with a basic MCU like ATmega328 (Arduino Nano).
I can write a sketch with #defines to configure the Arduino according to your sensor output, be it digital or analog.
Ice produces a resistance of up to a few Megaohms depending on the distance between terminals. An Arduino can easily measure this with the proper interfacing.
If you wish to discuss designing a custom sensor as part of the project, I can also design and test the electronics.
