I have experience work with ESP32, and if you are connecting your sensors to analog inputs, to process them with ADC, the source of your problems could be the low accuracy of the build in ADC, further more the readings may vary from one chip to other, giving different digital values for the same analog signal. Hello, My graduation internship project during the university was very similar to what you want to do: I developed a security system with several presence sensors (PIR HC-SR501), humidity/temperature sensors (DHT11) and open door/window sensors (magnetic switch sensors). The information from the sensors was collected by an ESP8266 and sent through the MQTTT protocol to a MQTT Broker (server) running on a Raspberry PI. This way, from a mobile MQTTT application you can subscribe to ESP8266 topics and view the security system status on your smartphone. As you can see in my portfolio, I am very familiar with the development of embedded software and PCB layout for the ESP32 and ESP8266 microcontrollers. Because ESP8266 and ESP32 are fully compatible platforms, I have a lot of fully functional code that I could use as reference to complete this project.
